Crispy Cherry Chicken Thighs

These chicken thighs are marinated in a blend of olive oil, red wine vinegar, minced garlic, italian seasoning, and a heaping spoonful of Wild Cherry Seasoning. Then, they’re sprinkled with even more cherry seasoning before spending just a few minutes on a hot grill. Chicken thighs are easy to cook on the grill because they hold up well to high heat and while still keeping in that juicy flavor. Other cuts of chicken meat, like chicken breast, are more prone to drying out and overcooking. But this recipe for crispy cherry chicken thighs keeps that flavor thanks to a cherry marinade and minimal time on the grill.


The cherry seasoning is a sweet and salty combination of cherry flavor, onion, garlic, and spices. This blend is a perfect season for the juicy chicken thighs. Plus, they’re skin-on and bone-in which provides extra flavor when the fat renders: That’s why it’s fairly easy to make that skin nice and crispy while the chicken stays tender.





Ingredients

  • ½ cup olive oil

  • ⅓ cup red wine vinegar

  • ½ tsp italian seasoning

  • 1 tsp minced garlic

  • 1 ½ tablespoons Wild Cherry Seasoning and Rub, divided

  • 1 lb chicken thighs, bone-in, skin-on


Directions

  1. In a shallow bowl or baking dish, whisk together the olive oil, red wine vinegar, italian seasoning, minced garlic, and 1 tbsp Wild Cherry Seasoning. Place the chicken thighs in the marinade.

  2. Let sit for 30 minutes, then preheat the grill to medium heat.

  3. Remove the chicken thighs from the marinade and sprinkle with ½ tsp Wild Cherry Seasoning.

  4. Place chicken on the preheated grill, skin-side down. Cook for approximately 5-6 minutes, then flip and continue cooking for another 5-6 minutes. Check after 4 minutes to ensure the skin is crispy, but not burning.

  5. Depending on the thickness of your chicken thighs, you may need to continue cooking on indirect heat for 3-5 minutes. Use a meat thermometer to check for an internal temperature of 165 degrees fahrenheit.

  6. Let chicken thighs rest for 10 minutes before serving.
